I love this recipe and it is especially good in August and September when there are lots of courgettes ripening in the garden. There are some modifications that you can make to make it a little bit healthier (or to use up more courgettes): increase the weight of the courgettes to around 800g; add thyme when you are frying the courgettes; replace the cream with plain natural yogurt; mix the Parmesan on the top with some breadcrumbs. Great comfort food that heats up the day after just fine. You can also freeze the courgette and garlic mixture to use at a later time.
