Step 1
Slice the zucchini lengthways into long strips . If you have the small
Round zucchini slice those . I’m using a ridge slicer but if you don’t have one just slice it with a regular knife . Once sliced season very well with garlic and herb salt and black pepper

Beat three eggs in a shallow dish with salt and black pepper then pour breadcrumbs into another shallow dish and add garlic salt black pepper cayenne thyme and grated Parmesan and mix thoroughly

Step 3
Dip the zucchini into the egg let the excess rub off then coat generously in the breadcrumb mixture . Fry in a little olive oil on medium heat until golden on one side then flip and cover and cook another 3 minutes . Drain on paper towels and enjoy . Alternatively you can bake at 200 c / 400 f for about 15 minutes
