Better Than Banana Bread Cookies
These cookies are as tasty as banana bread and very versatile! They are super moist, yet light and fluffy, and can be made with or without gluten free and dairy free chocolate chips. This is a simple recipe that your whole family will love!

Instructions
Step 1
Preheat oven to 350 degrees and line two baking sheets with parchment paper.
Step 2
In a medium bowl, mix together the bananas, and baking soda and let sit for 2 minutes.
Step 3
In a large bowl, beat butter and sugar together on medium speed until smooth. Add egg and vanilla extract and mix until the mixture is light and fluffy.
Step 4
Add the banana mixture to the butter mixture
Step 5
In a medium bowl, stir together flour, salt, and spices
Step 6
Pour the flour mixture into the banana mixture and mix until fully combined
Step 7
Scoop batter with a greased 1 1/2 tablespoon cookie scoop and place cookies 2" apart on prepared cookie sheet
Step 8
Bake for 11-13 minutes or until golden brown. Allow cookies to cool for 2-3 minutes before moving to cooling rack. Store in an airtight container at room temperature for up to 3 days.
