Instructions

Step 1
In a saucepan heat the first 4 ingredients just until warm and shortening has melted (115-120) I do use a thermometer.
Step 2
I also prove my yeast – I put the yeast in a half cup of very warm water to make sure it rises.
Step 3
In the mixer bowl put the 6 cups of wheat flour, flax seed meal, dough enhancer and 4 eggs—add the milk mixture along with the yeast and beat at medium speed—scraping the sides of the bowl occasionally.
Step 4
Add the white flour a cup at a time and beat at high speed until bread mixture pulls away from the sides of the bowl cleanly.
Step 5
Turn out onto a lightly floured surface and knead for a minute or two.
Step 6
Shape a ball and place in a lightly greased bowl, turning once to grease. Cover and rise in a warm place until doubled in size about an hour
Step 7
Punch down and then divide into loaves. I usually get 6 loaves when I use the dough enhancer. My loaf pans are slightly smaller than full size.
Step 8
Cover and let rise in a warm place until almost double in size (about 45 minutes).
Step 9
Bake at 350 degrees for 28 minutes—that is what works for my oven.
Step 10
Remove from oven and rub butter over the tops of the loaves with a paper towel. Let cool and enjoy.
