Instructions
Step 1
Rub mustard & sugar all over the beef, season well. Add oil to a pan and sear beef on all sides, remove and set aside.
Step 2
Add in onions, season and fry on high for 2-3 mins, mix in garlic for 1-2 mins.
Step 3
Transfer onions to the slow cooker, place beef on top, pour in stock and beer.
Step 4
Season well and place thyme on top.
Step 5
Cook for 6-8 hours on low or 4-6 hour high.
Step 6
Remove beef and add cornflour to sauce. Shred beef and add back into sauce.
Step 7
Serve in brioche buns with rocket, coleslaw and bbq sauce.
