Instructions
Step 1
Preaht oven to 350F and spray a baking dish with oil.
Step 2
Cut the tops off of peppers, and slice long ways to create a slit. Chop up any leftover pepper scraps. Place the peppers in the baking dish and cook for 10-15 minutes to soften.
Step 3
In a large pan- add oil, onion and any chopped pepper scraps. Cook for 3-5 minutes, add in garlic and ground beef and continue cooking until beef turns brown. Add in seasonings and 1/2 jar of vodka sauce. Continue cooking till sauce thickens slightly, stir in 1 cup of cheese (mix them together). Take off the heat and let cool slightly.
Step 4
Once peppers are out of the oven and slightly cooled it's time to assemble- spoon the meatball mixture evenly into the peppers. Top with remaining cheese and cook for 5-10 minutes (until cheese bubbles). Garnish with parsley & enjoy!
