Honestly, the lemon ricotta could be eaten on its own because it’s so fluffy and delicious as is 😋 but adding it to waffles was a game changer for the waffles!!! Step 1
Mix together dry ingredients in a large mixing bowl- flour, sugar, baking powder, baking soda, and salt.
Step 2
Crack the eggs into a medium-sized mixing bowl and whisk together. Add milk, lemon ricotta, vanilla, lemon zest, lemon juice, and melted butter. Whisk together until smooth.
Step 3
Combine dry and wet ingredients and mix together until the batter is made and smooth.
Step 4
Scoop the batter into your waffle maker-- or if you don't have a waffle maker you can just make pancakes! When ready, top with maple syrup, powdered sugar, and blueberries.
