Instructions

Step 1
Toast angel hair with 1 tbsp oil in nonstick skillet over medium-high heat until toasted and golden, about 4 minutes. Transfer to a plate.
Step 2
Cook chicken until cooked through. Remove from heat.
Step 3
Add 1 tbsp oil to skillet along with chorizo, onion, 0.5 tsp salt. Cook until onion is softened.
Step 4
Add garlic and chipotle (and bacon, if using). cook until fragrant.
Step 5
Stir in tomatoes, broth, beans, and toasted angel hair. cover and cook, stirring often, until all liquid is absorbed and vermicelli is tender.
Step 6
Return chicken to skillet and remove from heat.
Step 7
Sprinkle cheese over top, cover and let sit until cheese melts.
