2whole wheat pita rounds
6 inch, split
¼ cupolive oil
divided
½ teaspoonkosher salt
divided
½ teaspoonblack pepper

1zucchini
medium
1 ½ tablespoonsChipotle chilies in adobo sauce
finely chopped, divided
1 tablespoonfresh lime juice
4 cupsBibb lettuce
chopped
1 x 14.5 ouncecan unsalted chickpeas
drained and rinsed
1 cuptomatoes
chopped
¼ cupsour cream
¼ cupunsalted roasted pepitas
2 tablespoonsscallions
chopped
Instructions
Step 1
1. Preheat oven to 400 degrees
Step 2
2. Brush uncut sides of pita rounds with one tablespoon of oil and sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper

3. Place directly on oven rack and bake until crispy, 5 to 6 minutes. Cool slightly about 5 minutes and slice into thin triangles

4. Using a Y shaped peeler, peel thin strips from zucchini to measure 1 cup
Step 5
5. Toss together zucchini strips and 1 1/2 teaspoons Chipotle chilies. Let stand at room temperature for about 10 minutes

6. Whisk together lime juice and remaining one tablespoon Chipotle chilies in a small bowl
Step 7
7. Gradually whisk in remaining 3 tablespoons of oil
Step 8
8. Toss together lettuce, chickpeas, tomatoes and dressing
Step 9
9. Season with remaining 1/4 teaspoon salt and remaining 1/4 teaspoon pepper
Step 10
10. Divide among four bowls. Top with zucchini strip mixture, pita triangles, sour cream, pepitas and scallions
