Spicy Salmon Bibimbap

It's one of my favorite bibimbap aka. rice bowls - with lots of different flavors and topped off with Chogochujang, which is a spicy, tangy, and sweet dipping sauce made of gochujang, vinegar, and sugar. These three ingredients are the basics and you can level up by adding apple and onion (like me) or even lemonade or Yakult. I prefer my mom's recipe with apple and onion as these give a natural fruity-sweet-sourness to the sauce and an interesting texture. In the southern part of Korea, that's where my parents are from, they even dip hearty pancakes in chogochujang.

Instructions

Step 1
It's super easy: prepare your favorite vegetables by slicing them into bite-sized pieces/into thin strips. If you don't have Korean radish or perilla leaves on hand, feel free to use different types of crunchy vegetables like white or red cabbage. Top off your rice bowl with sliced vegetables and salmon. Pour over chogochujang (start with a small amount and add up if you like it spicy) and sesame oil. Enjoy 😀
Step 2
For the sauce, start by dicing the apple and onion. Mix them in a blender with 2 tbsp vinegar.
Step 3
Transfer the mixture into a bowl and add gochujang, sugar, crushed garlic, and sesame seeds (optional). Make a taste check and add more of the above ingredients to your liking.
Step 4
I don't recommend having a date or meet-up after this rice bowl, you'll have a serious garlic breath 😆
