2 packetstaco seasoning

10 ozCan of Red Enchilada Sauce

2 cupsgrated sharp cheddar cheese

1 cupgrated mozzarella cheese

Instructions

Step 1

1. Preheat oven to 400 degrees and grease an 11x13 baking dish

Step 2

2. In a large bowl, combine the Jiffy mix, the corn, sour cream and eggs

Step 3

3. Spread into the baking dish and bake for 30-35 minutes or until cooked through

Step 4

4. While the cornbread is baking, brown the ground beef with the diced onion. Drain the grease, then add the taco seasoning and enchilada sauce. Mix well and let simmer for a few minutes until thickened up.

5. When the cornbread is finished, use a fork to poke holes in the top.

6. Spread the meat mixture on Top with the cheese and put back in the oven for 15-20 minutes or until the cheese is golden brown and bubbly.

7. Serve hot and top with desired toppings. Enjoy
