Instructions
Step 1
In a large saucepan, over a medium heat warm the coconut milk until you start to get a light steam off the top. Do not allow to boil
Step 2
In a bowl whisk together the eggs, sugar cocoa and cornflour
Step 3
Slowly add one third of the warmed milk mixture to the egg mixture while continuously whisking (this will temper the egg and help prevent them for curdling)
Step 4
Add the tempered egg mixture back into the saucepan and heat over a medium-low heat while whisking continuously for approximately 5 minutes
Step 5
The custard is ready once it starts to thicken and coats the back of a spoon
Step 6
Remove from heat and whisk in vanilla
Step 7
Strain the custard through a sieve and pour into a container, place cling wrap on the top of the custard, put the lid on set in the fridge
