Cake
170gsugar
60gbutter
1egg
170gself raising flour
1 tspbaking powder
170gdates
1 tspbicarbonate of soda
180mlwater

Instructions
Step 1
Combine the dates with the bicarb and pour hot water over.
Step 2
Grease and line a 10" baking dish.
Step 3
Cream the butter and sugar. Whisk in the eggs, baking powder and half the flour.
Step 4
Lightly blend the dates mixture until there are only small lumps of date. Stir the dates mixture into the cake mixture and add the remaining flour.
Step 5
Pour into baking dish and bake at 160°C for 1 hour, or until a skewer comes out clean.
Step 6
For the sauce, melt the butter in a saucepan over a low heat. Add in the sugar and stir until dissolved - do not let it bubble! Once all sugar lumps are gone, pour in the cream and lightly simmer.
Step 7
Slice the pudding into portions and drench in hot sticky toffee sauce.
