The rice with caramelized onions ‘ rice was better without the black garlic. It always takes me longer than a recipe says to caramelize onions. The rice was easy The onions can be made the day before and kept in the fridge

Instructions

Step 1
Pour 3 tbsp. oil into a large sauté pan with a lid, and place over medium high heat. Once hot, add the onions, along with 1/4 tsp salt and fry for 12 minutes, stirring occasionally to make sure they don't burn. Add the lemon peel and cook for another 12 minutes, continuing to stir time to time, until onions are dark and caramelized. Transfer to a plate and set aside.
Step 2
Add the remaining 1 tbsp. plus 1 tsp oil to the pan, then add the rice and 1/2 tsp salt. Fry for 1 minute, stirring continuously, then pour in the water. ring to a boil, then decrease the hat to medium-low. Cover the pan and simmer for about 45 minutes, until cooked through. Remove from hat and stir in the onions & lemon juice. Serve at once, topping each serving with a generous spoonful of the yogurt and a sprinkle of parsley, alternatively you can serve the yogurt in a bowl on the side.
