Instructions
Step 1
Combine the zest and juice of the lime, garlic, shallot, and poblano pepper in a 1 quart bowl. Let sit for at least 10 minutes.
Step 2
Add the avocados a large pinch (~1 tsp) of salt and 20 to 30 grinds of pepper. Use a spoon, muddler, pestle or other tool to smash everything into a smooth mixture.
Step 3
Taste and add salt and pepper to taste.
