½ cupreduced-sodium chicken broth
2 tablespoonsfresh basil

Instructions
Step 1
Sprinkle the chicken and salt and pepper he a large skillet over medium heat until hot. Swirl and 2 teaspoons of the oil then add the chicken and cook until browned. 3-4 minutes on each side. Transfer the chicken to a plate and set aside.
Step 2
Return the skillet to the heat swirl in remaining 1 teaspoon of oil then add bell peppers onions mushrooms celery garlic and oregano cook stirring occasionally until vegetables are softened about 5 to 6 minutes
Step 3
Return the chicken to the skillet and the tomatoes in the chicken broth bring to a boil reduce the heat and simmer covered until the chicken is cooked through and the vegetables are tender about 20 minutes then stirring the basil and enjoy
