Step 1
Boil chicken breast till cooked.
Step 2
Once chicken is finished shred it, I like to use a mixer.
Step 3
Dice the onion, garlic, and poblano pepper.
Step 4
Add some olive oil to a sauce pan then add your onion, garlic, and poblano cook this down in the lime juice. Add in your chicken and one jar of sauce.
Step 5
Preheat oven to 400F.
Step 6
In a separate pan add in olive oil and a splash of sauce let that come to a simmer and dip your tortillas on both sides, then fill with the chicken mixture and roll into an enchilada.
Step 7
Fill up your baking dish with the enchiladas, cover with the remaining sauce and shredded vegan cheese bake for 10 minutes till the cheese is melted and enjoy!
