Step 1
Preheat oven to 400°
Step 2
Cook chopped chicken and salsa or pull from slow cooker
Step 3
Chop the veggies
Step 4
Assemble enchilada with chicken and veggies and cheese
Step 5
Poor enchilada sauce over top of enchiladas in baking dish
Step 6
Sprinkle cheese on top of enchilada, Cover in foil and bake in oven for 20 minutes
Step 7
Remove foil and bake for five more minutes
