Ingredients

4 tablespoonsextra virgin olive oil
½ cuppanko breadcrumbs
¾ teaspoonred pepper flakes
divided
kosher salt
black pepper
1 tablespoonlemon zest
grated
1 tablespoonlemon juice
1 bunchflat-leaf parsley
chopped
1yellow onion
medium, chopped
¾ cupFrench lentils
rinsed and drained
8 ouncesditalini pasta
14 ouncetomato puree
can

Instructions
Step 1
Set Instant pot to normal/medium saute. Add 2 tablespoons of oil and heat. Add panko, 1/4 teaspoon of pepper flakes and 1/2 teaspoon of salt & black pepper. Cook, stirring constantly, until panko is deep brown, 3-4 minutes. Transfer to a small bowl, add lemon zest and 1/4 cup parsley, toss to combine
Step 2
Add 2 remaining teaspoons of oil to instant pot. Add onion, cook stirring often, until softened, about 5 minutes. Stir in remaining 1/2 teaspoon pepper flakes, 1 1/2 teaspoons salt, 1 teaspoon black pepper, lentils, and 6 cups of water. Set on high saute and bring to boil, cooking 10 minutes, stirring occasionally. Then stir in the pasta and tomato puree.
Step 3
Seal instant pot, cook manual high pressure for 5 minutes, quick release
Step 4
Stir in remaining parsley and lemon juice. Season to taste. Transfer to serving bwl. Top with toasted panko, drizzle with oil and black pepper
