Buttery Hamantaschen

It's Purim! A fun Jewish holiday where we celebrate the downfall of the wicked man, Haman. (He was a bad guy, trust me.) We eat cookies called Hamantaschen that look like little three-cornered hats (well, they're suppose to, lol). But they're really good. This is my first attempt at making some myself. Turns out our Pie Mat makes a great non-stick rolling surface. The trick is to chill the dough each time you roll it out. Happy Purim! Instructions

Step 1
Cream the butter and sugar together in a food processor.
Step 2
Add the egg, vanilla, orange zest, and salt and mix well.
Step 3
Add the flour and process until the mixture forms large crumbs.
Step 4
With the machine running, add just enough water until the dough forms a ball. Chill the dough thoroughly before rolling.
Step 5
Roll out pastry to about 1/8-inch thick. Use a glass or cookie cutter to cut 3-inch circles of dough.
Step 6
Place about 1 tsp of Apricot Preserves in the center of the circle and fold up the edges, pinching the corners to form a 3-cornered “hat”.
Step 7
Bake at 350 degrees for about 20-30 minutes until golden.
