Instructions

Step 1
Place the 00 and durum flours in the bowl of a stand mixer fitted with the dough hook.
Step 2
Make a well in the flour with your hands and add the egg yolks, olive oil, and water in the center.
Step 3
Mix on low speed until combined.
Step 4
Remove the dough from the mixer and knead by hand for 8 minutes, or until smooth.
Step 5
Wrap the dough with plastic wrap and refrigerate for at least 2 hours before using.
