Instructions

Step 1
Heat a griddle on medium heat. Spread 3/4 teaspoon butter over the skillet. Place the bread slices over the bubbling butter. Once the bread is lightly browned, turn the bread slices. (This is the trick to get a perfect texture on the sandwich, with both sides of each bread slice being toasted.)
Step 2
Top one of the bread slices with shredded cheese and tomato slices. I used Mexican Blend shredded cheese. Season with crushed black pepper.
Step 3
Place the other bread slice on top and press lightly with a flat spatula.
Step 4
Spread the remaining 1/4 teaspoon butter on the skillet and slide the sandwich over this butter.
Step 5
Turn the sandwich when the underside is golden brown. Once both sides have reached the perfect golden brown crispiness, remove from the heat. Cut diagonally and serve hot.
