Creole rice

Creole rice is the most cooked dish in the Seychelles. The Seychellois have a culture to include rice in both lunch and dinner. The creole rice is easy to make and great or all the family. My friends and teenage boys loved it! This recipe was tested and tweaked to be more nutritious and photographed by Jackie Wilson - Registered Dietitian.

Instructions

Step 1
Rinse the rice (note you can use brown or wholegrain basmati) and cover with water, bring to the boil and simmer for 10-12 minutes until just soft.
Step 2
Heat your oil gently, then add your onion, garlic, curry leaves, red pepper, ginger and cloves and let it cook for at least 5 minutes until the ingredients change to a light brown colour
Step 3
Add the turmeric, cinnamon to the onion mix and then let it cook for a further 5 minutes on low heat, stirring slowly.
Step 4
Add the rice to the softened onion mix and garnish with parsley - if you have some. Serve on plate with a creole prawn curry, lightly fried fish or baked spicy chicken and salad. This has a delicious, mild flavour so great for all the family.
