Step 1
Heat a pan on medium heat, and add oil once heated. Toss in the red onion, and season with salt, pepper, and seasoning of choice. Cook until the red of the red onion has mostly cooked out.
Step 2
Add in the corn and sauté, tossing to prevent the kernels from burning.
Step 3
Add in all 3 colors of pepper, as well as the jalapeno, zucchini, and squash. Cook down until soft and mix in cilantro and lemon juice.
