The Meats
Instructions
Step 1
-Clean pork shoulder thoroughly with salt and lemon
-Separate the skin (chicharron)
-Strain excess water and pat dry with paper towel
-Place Sofrito ingredients in blender. Blend into thick paste.
-Massage Sofrito into pork shoulder and skin thoroughly
-Place skin on top, cover with Saran wrap, place in fridge, let marinate for 2 hours minimum
-Pre-heat oven to 350 degrees
-Place pork shoulder in a pan with 1 cup of water -Cover with crumpled foil leaving space between the meat and top foil (prevent sticking)
-Roast for up 3-4 hours (baste every hour after the 2nd hour)
-on 3rd hour set oven to broil and watch closely
