Instructions
Step 1
Nestle the belly into a roasting pan or an oven-safe vessel the the belly will sit snugly. Mix together the salt and surgar and rub all over the meat toss any extra that did not stick. Cover with pastic wrap and put in fridge over night, no longer than 24 hours
Step 2
heat oven to 450 F

Step 3
Discard all liquid that has accumulated in the container. Put belly in oven, fat side up, cook for 1 hour, basting with rendered fat at 30 minutes.
Step 4
Turn oven temp down to 250 F and cook for another 1 hour until tender. Remove from oven and transfer belly to cool. Save the liquid gold for other projects
Step 5
When belly is cool enough to handle, wrap in plastic and sore in fridge for up to 2 weeks
