Step 1
Add dry ingredients to a bowl & whisk everything together, before adding in the wet ingredients - everything but the coconut oil! Do not over mix the batter. If the batter is lumpy, that is okay.
Step 2
Heat a skillet with a spoonful of coconut oil.
Step 3
Place the batter on the skillet. The batter will become a bit doughy, so spread the batter with a fork to make a circular shape.
Step 4
Cook on medium to high heat until you see little air bubbles appear on the pancake.
Step 5
Flip & cook the other side. This recipe makes about 8-10 pancakes based on your preferred size.
Step 6
Add toppings & enjoy!
