In a medium bowl, whisk together the almond flour and salt.

Add the eggs, almond milk (or water), and maple syrup to the dry ingredients. Whisk everything together until you get a smooth batter. The consistency should be slightly thicker than regular pancake batter. If it seems too thick, add a little more almond milk or water, one tablespoon at a time, until you reach the desired consistency.

Heat it up:

Heat a non-stick pan or griddle over medium heat. Grease the pan with a little butter or oil to prevent sticking.

Pour and cook:

Pour 1/4 cupfuls of batter onto the hot pan, leaving space between each pancake for them to spread.

Cook the pancakes for 2-3 minutes per side, or until bubbles appear on the surface of the batter and the edges start to set.

Flip it like a pro:

Carefully flip the pancakes using a spatula and cook for another 1-2 minutes, or until golden brown on the bottom.
