2 Tbsmoroccan seasoning
23gpistachio dukkah
⅓ cupextra virgin olive oil
0.5 bunchcontinental parsley
leaves picked, finely chopped

Instructions
Step 1
Preheat a barbecue grill or chargrill pan over high heat. Stir vinegar and sugar in a small bowl until sugar has dissolved. Add onion and stir to combine. Set aside until required.
Step 2
Meanwhile, place mushrooms in a large, shallow baking dish. Add seasoning and dukkah. Drizzle with 1/4 cup oil, then toss to coat. Grill mushrooms for 5 minutes on each side or until charred and softened. Thickly slice.
Step 3
Meanwhile, combine parsley, remaining oil and lemon juice in a small bowl. Divide hummus among bread rounds. Top with mushroom, spinach and drained onion. Drizzle with parsley oil, fold to enclose filling and serve with lemon wedges.
