Plant based veggie patties

These veggie patties are gluten free and packed with plant-based protein and fiber. They can be prepared in the pan, air fryer or oven. As a dip you can use the cucumber raita recipe shared in this community.

Instructions

Step 1
Peel and roughly chop the onion, bell pepper and parsley if using.
Step 2
Add cooked chickpeas, garlic, onion, lemon juice, and spices to a food processor and pulse until you get a crumb consistency.
Step 3
Next, add the preferred flour and pulse a couple of times until combined (not more than 3 pulses). Scrape down the sides of the food processor as needed.
Step 4
Next, add the bell pepper and your chosen veggies (I used sweetcorn, carrot, spinach and peas) and parsley and pulse only 2-3 times max.
Step 5
Preheat the oven at 180 degrees. Divide the mixture into 8 patties, place them on a baking tray and bake them for about 30 min.
