Instructions

Step 1
For the filling, combine sugar and cornstarch, and mix well. Add sugar and corn starch mixture along with raspberry puree to the saucepan. Bring it to a boil, constantly stirring, and cook for 1-2 minutes, or until thickened. Set aside to cool a bit, then transfer to the piping bag with a round nozzle, and place it in the fridge to cool completely.
Step 2
To proof yeast, in a glass combine 10g instant yeast (2.5 tbsp), 1/2tbsp sugar, and 2tbsp lukewarm water. Mix well and set aside for 10min. After 10 minutes the mixture should be foamy and doubled in size, if not then discard and start again.
Step 3
For the dough, in a mixing bowl combine flour, lukewarm milk, egg yolks, yeast mixture, sugar and salt. Start mixing with the dough hook on a low speed, until it comes together (about 5 minutes), then add butter and continue beating for another 10 minutes, or until the dough is smooth and elastic.
Step 4
Then, take the dough from a mixing bowl, and form a ball. Grease the mixing bowl with 1tbsp olive oil, and place the dough back. Grease the top of the dough with the remaining olive oil, cover with a clean kitchen towel and place in a warm place to rise for 1-1.5 hours.
Step 5
When the dough doubles in size, transfer it to the floured surface and roll out(thickness around 1cm).
Step 6
Using a cookie cutter (diameter 8cm), cut your future doughnuts. Repeat until you use all dough.
Step 7
Using scissors, cut the parchment into squares slightly larger than doughnuts. Transfer each doughnut disk to the piece of parchment and leave it to rise in a warm place for 1 hour, or until double in size.
Step 8
In a large pot heat up the vegetable oil (the temperature of the oil should be around 180C).
Step 9
Place the doughnut with the parchment into the oil, then remove the parchment. Fry from each side until golden brown, then remove them to the paper towel to drain.
Step 10
Let it cool a bit then garnish with sugar.
Step 11
Using a knife make a slit on the side and fill the doughnuts with your filling.
