Instructions
Step 1
Heat oven at 225C (450F).
Step 2
Press garlic, add half if lemon juice, salt, and all other herbs, mix well and rub rack with it thoroughly.
Step 3
Place rack in a tray with fat side up and roast for 20min. Then turn rack, add wine and roast for 10 more minutes. Take rack out of the oven, cover with foil and let rest for 10 min before serving.
Step 4
In a bowl, toss baby spinach, rocket and red onion sliced thinly, add olive oli, salt and balsamic vinegar, mix and serve.
