G - Meat-Free Mince Sticky Chilli Stir-Fry

We've made this sticky stir-fry super quick. You'll crisp Meatless Farm's mince on high heat, throw in sweet pepper and a tangy chilli sauce, then sprinkle with sesame seeds to serve.

Instructions

Step 1
Add the basmati rice and 300ml cold water to a pot with a lid and bring to the boil over a high heat. NOTE! (if using rice maker, the rice will take about 30-40 minutes - plan accordingly)! Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked. Once cooked, remove from the heat and keep covered until serving.
Step 2
Whilst the rice is cooking, heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat. Once hot, add the meat-free mince and cook for 5-6 min or until browned and crisped.
Step 3
While the mince is cooking, deseed the pepper (scrape the seeds and pith out with a teaspoon) and slice into small, bite-sized pieces. Peel (scrape the skin off with a teaspoon) and finely chop (or grate) the ginger. Peel and finely chop (or grate) the garlic. Trim, then finely slice the spring onion.
Step 4
Once the meat-free mince has browned, add the sliced pepper to the pan and cook for 2-3 min until the pepper has started to soften.
Step 5
Meanwhile, add the rice vinegar, soy sauce, sesame oil and chilli jam to a bowl. Add 1 tsp sugar and 1 tbsp cold water and give everything a good mix up – this is your sticky chilli sauce.
Step 6
Once the pepper has started to soften, add the chopped ginger and garlic and cook for 1-2 min or until fragrant.
Step 7
Once fragrant, add the sticky chilli sauce and cook for 2 min until everything is coated and sticky – this is your meat-free sticky chilli stir-fry. Serve the meat-free sticky chilli stir-fry over the cooked basmati rice. Sprinkle over the sesame seeds and sliced spring onion. Enjoy!
