Ingredients
2 servings

2 cupsrice
cooked

1 cuppineapple
chopped

0.5 blockfirm tofu
organic

1onion
small

2garlic cloves

½ Tbspnutritional yeast

½ tspkala namak salt

tumeric
for color

black pepper
to taste

1red bell pepper

1carrot

2spring onions

1 cupbroccoli florets
chopped

½ cupedamame
chilled

¼ cupcorn

¼ cuppeas

2 Tbspcoconut aminos

2 Tbspteriyaki sauce
style

Instructions
Step 1
wash and peel all vegetables. if you’re including frozen peas, corn and edamame, remove from the freezer and set aside.
Step 2
dice carrot and bell pepper, cut broccoli into small florets and slice spring onion.
Step 3
finely, dice onion and garlic and sauté them with a few drops of avocado oil or a splash of water in a large pan or wok. Add the onion. when the onion begins to brown, add the garlic.
Step 4
crumble the tofu with a fork. add the crumbled tofu to the pan along with the spices and continue cooking for a few more minutes until all excess liquid from the tofu is gone.
Step 5
set tofu scramble aside and sauté carrot, bell pepper, broccoli and spring onion until veggies are slightly tender but not overcooked.
Step 6
add rice, peas, corn, and edamame to the pan and stir until everything is well combined and heated through
Step 7
season with coconut aminos, teriyaki sauce and chili to taste.
Step 8
add tofu scramble back to the pan and fold in pineapple pieces.
