Preparation
Step 1
Boil 6 cups rice and set aside
Step 2
Make omlette with eggs, salt and some yellow food colour and cut in strips. Set it aside

Boil 1 kg chicken breast until tender and then shred and set aside
Step 4
Chop cabbage, carrots, green onions and bell peppers and set aside
Cooking
Step 5
Fry onion in oil till light brown and add crushed garlic. Add the boiled & shredded chicken and fry for a bit

Turn heat high and add all the vegetables (bell peppers, cabbage and carrots) and stir fry them on high heat for a couple minutes. Add soy sauce, salt and pepper
Step 7
Layer rice, vegetable mix, spring onions, omlette slices and mix everything together. Turn heat low and cook for a further 5-7mins
Step 8
Plate the rice and add some spring onions and Omlette strips on top
