Lebanese bbq chicken

My version of Lebanese barbecued chicken. Tastes just like what you’d find at a restaurant.

Instructions

Step 1
Butterfly chicken by placing breast-side down and pushing down gently to break back bones. Cut out back bone with kitchen shears. Can freeze it for stock. Put two cuts into each breast and legs to help it cook and marinate.
Step 2
Mix all other ingredients together in a bowl. Rub this marinade all over chicken, cover and refrigerate for at least 2 hours.
Step 3
Preheat barbecue grill. Lightly oil grill.
Step 4
Take chicken out of marinade and save marinade. Place chicken skin-side down on grill until lightly charred.
Step 5
Turn chicken over and baste with marinade. Turn burner directly under chicken off, leaving other burner on low and close lid. Barbecue should be about 180 degrees C with lid closed.
Step 6
Cook for 30 minutes and baste with any leftover marinade and cook further 20-30 minutes until done.
Step 7
Serve with Lebanese bread and salad.
