Easy, no-soak, white beans cooked in the oven. Serve without the cooking liquid as a delicious vegetarian/vegan meal by themselves. Add cooked chicken, pork, or sausages for a hearty meal. Or eat with the cooking liquid as soup, either as is or puréed. Add extra water or stock if the soup is too thick.

Rinse and pick through dry beans. Do not soak! Put all ingredients in a covered casserole dish big enough to hold them all with about three inches of space on top. Cover with water to about an inch from the top of the casserole dish. Cover. Put in 250 degree oven for 3 - 4 hours (or longer, depending on the beans). Stir and test after about two hours, or when you can smell them. They won’t be done yet, but you can get an idea of whether they need a little more time or a lot more time. Then test every half hour or so until done to your preference. You can also cook at 350 degrees for about half the time. The results are the same, but it is harder to judge how long to cook and easy to overcook and end up with bean mush.
