Instructions

Step 1
Place the rice in a sieve and rinse thoroughly under cold running water, until the water runs clear.
Step 2
In a medium saucepan bring the coconut milk alternative, water and sweetener to the boil, add the rice, a pinch of salt, and cover, then turn the heat to low.
Step 3
Allow to simmer for 15 minutes until all of the liquid has been absorbed.
Step 4
Test the rice.
Step 5
If it is too firm, you can add a little more water and continue to cook until it becomes tender.
Step 6
Remove from the heat and stir in the lime juice and zest.
Step 7
Season with pepper to taste.
Step 8
(At this point you could cool and freeze for another day.
