Baba Ganoush also known as Mutabal is a Palestinian appetizer consisting of mashed grilled eggplant, olive oil, garlic, lemon juice, salt, and tahini. Served with fresh warm arabic bread and eaten with our hands 🙌

Step 1
Preheat oven 450f or grill.
Step 2
Roast eggplant until the interior is tender and skin is crispy, broil for the last minute. (Cut open and check eggplant with fork, if its super easy to pull apart then it’s done)
Step 3
Scoop out flesh into bowl and discard skin
Step 4
Add a drizzle of tahini, lemon, garlic(mashed), drizzle of olive oil, salt and whisk together with fork (taste as you go to see if you need more ingredients. )
Step 5
Transfer to plate and drizzle with olive oil
Step 6
Add garnish..parsley, green cracked olives, and sumac. Enjoy!
