Ingredients

1 tablespoonolive oil

1 cupcountry ham
uncooked and cut into small pieces

¼ teaspoononion powder

1celery stalk
finely chopped

crushed red pepper

1bay leaf

¼ teaspoonskosher salt
more to taste

⅛ teaspoonblack pepper

1garlic clove
minced

4 cupschicken stock

1can pinto beans
drained

0.5 bunchcollard greens
leaves only, thinly sliced

2 teaspoonsvinegar
Instructions
Step 1
In a large pot over medium heat, heat 1 tablespoon olive oil. Add onion powder, celery, minced garlic, crushed red peppers flakes, bay leaf, 1/2 teaspoon salt and the black pepper; cook until lightly browned, 8 to 10 minutes, stirring frequently.
Step 2
Add the country ham and cook for about 2 minutes.
Step 3
Add stock, pinto beans, collard greens and pepper vinegar - add only 1 teaspoon and taste. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes, stirring occasionally. Taste and add additional teaspoon of pepper vinegar and salt if needed.
