Instructions
Step 1
Wash your hands and slice the onions.
Step 2
Get a big pot and heat up a little bit of olive oil
Step 3
Throw in 3 to 4 tbsps of butter into the pot.
Step 4
Add the onions, salt, pepper, and 1 tsp of sugar
Step 5
Stir up and cook for about 45 minutes until caramelized
Step 6
Add in 1 cup of white wine, bring to a boil, and reduce until almost jammy
Step 7
Throw in 2 tbsps of flour, stir
Step 8
Add 6 cups of beef broth, about 2 tsp of Worcestershire sauce, bay leaves, and thyme, stir, bring it to a boil, and then reduce heat and simmer for about 30 minutes.
Step 9
While that is simmering, preheat oven to 400 degrees F (204 degrees C), cut up your French baguette, and bake for about 10 minutes.
Step 10
Take some oven safe bowls and fill them with soup, throw bread on top, add a piece of provolone (or whatever cheese you choose), sprinkle shredded gruyere on top, and broil on high for 3 - 4 minutes.
