Step 1
Bring large pot of salted water to boil. Trim and quater zucchini lengthwise, cut crosswise into 1/2 thick pieces. Peel and mince garlic. Zest and quarter lemon.
Step 2
Once water is boiling add spaghetti, reserving 1 cup pasta cooking water.
Step 3
Meanwhile heat a drizzle of olive oil in a large non stick pan over medium-high heat. Add zucchini, cook, stirring occasionally, until browned and softened, 4-6 minutes. Season with salt and pepper. Set to side, wipe out pan.
Step 4
Season chicken all over with Italian seasoning, salt and pepper. Heat a large drizzle of oil over medium high heat. Add chicken, cook until browned and cooked through 3-5 minutes per side. Transfer to board, let cool, slice chicken crosswise.
Step 5
Heat drizzle of olive oil in pot used for spaghetti over medium-high heat. Add garlic and half lemon zest. Cook stirring until fragrant. 30 seconds. Stir in 1/2 cup reserved pasta cooking water, stock concentrate and juice from 2 lemon wedges. Simmer until thickened, 1-2 minutes.
Step 6
add spaghetti, zucchini, sour cream and 1 tbsp butter, toss to coat. Add half parmesan and season with salt and pepper.
