Instructions
Step 1
Finely grate potatoes. Drain excess liquid.
Step 2
Add eggs, onion, flour, salt and baking powder.
Step 3
In a frying pan, add oil to the depth of 1/8 inch; heat on medium-high to 375 degrees.
Step 4
Drop batter by heaping Tablespoonfuls in hot oil. Flatten into patties. Fry until golden brown, turning once.
Step 5
Serve immediately with shredded cheese and sour cream, or with a side of applesauce.
