Happy Hanukkah! I like this recipe ~a latke~ 🤪 and topping it with apple sauce takes it to the next level! We did half yams and half sweet potatoes and I’m not entirely sure what the difference is but I know I like it.

Instructions
Step 1
Wash the potatoes and yams. If you do not have a food processor, use a grater to shred them. If you do have a food processor, slice the potatoes and yams into sizes that will fit in the food processor. Put the shredded potatoes into a large mixing bowl.
Step 2
Crack 7 eggs in a bowl and whisk together. Pour over the shredded potatoes. Add bread crumbs, salt, and minced garlic. Mix together.
Step 3
In a large cast iron pan, add a deep layer of oil. Stick a chopstick or a piece of wood in the oil-- if it bubbles, it's ready. In your hands put the shredded potatoes in your hand and squish it together, and flatten it. Add the latke into the oil and let it fry for 3 minutes on each side.
Step 4
When ready, put the fried latkes on a paper towel to soak up extra oil.
Step 5
Serve immediately, or keep it in a warmed oven at 200 degrees to serve warm.

I'm team apple sauce all the way, but feel free to eat with sour cream. To each their own! Happy Hanukkah :)
