Step 1
Brush pork with half the oil; sprinkle all over with salt and pepper.

In heavy, ovenproof skillet, heat remaining oil over medium-high heat; brown pork.
Step 3
Transfer to oven and bake until juices run clear and just a hint of pink inside, about 15 minutes.
For Sauce
Step 4
In a saucepan, whisk together soup, milk, water and both mustards over medium heat. Add mushrooms; simmer until thickened, about 5 minutes.
Step 5
Stir in tarragon and cook for 1 minute more.
Step 6
Pour sauce over noodles; slice pork and arrange on top.
