Ingredients

1 cupcelery

thinly sliced

1 cupfresh flat-leaf parsley

coarsely chopped

½ cupred onion

thinly sliced

¼ cupolive oil

1 tspkosher salt

½ tspfreshly ground pepper

1fennel bulb

thinly sliced

1Sweet Crisp Apples

very thinly sliced

2 tabapple cider vinegar

1 tablespoonsugar

Instructions

Step 1

Toss together first 6 ingredients in a medium bowl.

Step 2

After slicing fennel bulb very thinly, reserve fronds. Finely chop fennel fronds to equal 1 1/2 tab. and sprinkle over salad. Add fennel slices to salad.

Step 3

Toss together apple slices, vinegar and sugar in a small bowl. Make sure all apples are coated well.

Step 4

Now add apple mixture to fennel mixture and combine well.

Step 5

Refrigerate covered until ready to serve.
