Makes 1 loaf of bread.
Can be baked in 1 pan (8 x 4 or 9 x 5 )
It makes 2 free form loaves, by dividing the dough into 2 pieces. You can form logs or rounds.
Also can be used for dinner rolls by dividing into 15 pieces and baked in a 9 x 13 pan

Step 1
Put water, yeast and sugar in small bowl and stir until dissolved. Let sit for about 3-7 minutes or until foamy. Add to mixer bowl and add salt and oil/butter, mix.
Step 2
Using speed 4 and the flat beater (Kitchenaid) add flour 1/2 cup at a time, beating well after each addition. Continue adding flour until you have a soft dough. Continue to mix with flat beater for 5 minutes. Switch to dough hook and turn on speed #2 only and knead 4 to 6 minutes, until the dough is elastic.
Step 3
Remove dough from bowl, shape into a ball and cover with your bowl. Let it rest for 5 minutes if using instant yeast. If using Active, allow the dough a rise until double in size in the bowl, covered with a towel or plastic wrap.
Step 4
Preheat oven to 375 and cut a slit in the top of the bread (if making a loaf). Brush with a little egg glaze or milk.
Step 5
Bake approx. 20 - 30 minutes until done. I test with a instant read thermometer for a reading of 195 degrees.
