Instructions

Step 1
Slow Cooker: Place chicken in cooker, add onion, garlic, tomatoes, broth, beans and carrots. Cook high 6 hours or low 8 hours. A half hour before serving, removed chicken from pot and add zucchini, rice, and kale. Use a fork to pull chicken off bones. Chop or shred meat and return to cooker. Season with s&p, top with cheese.
Step 2
Pressure Cooker: Add all ingredients except zucchini, rice, kale, and cheese to PC. Cook on high pressure 30 min. quick release pressure. Remove chicken from pot. Add zucchini, rice, and kale to pot. Use a fork to pull chicken off bones. Chop or shred meat and return to cooker. Cook on high again for 10 minutes. Quick release pressure. Season with s&p, top with cheese.
