Ingredients

2baking potatoes
large, pierced and baked
1flaxseed egg
¼ cupalmond milk
unsweetened, unflavored, or plant-milk of choice
0.5red onion
diced
0.5red bell pepper
diced
1jalapeño pepper
deseeded, deveined and diced
4 tablespoonsfresh parsley
chopped
3 tablespoonsfresh dill
chopped
2 teaspoonsgarlic powder

2baking potatoes
large, washed, pierced and baked
1 cupnacho cheese sauce
skinny
2cloves garlic
minced
0.5white onion
diced
8 ouncessliced mushrooms

Instructions
Step 1
Preheat the oven to 400 degrees.
Step 2
Scrub and wash each potato and pierce each potato several times with the tip of a sharp knife.
Step 3
Place potatoes on the center rack of the oven and bake for 1 hour.
Step 4
Remove potatoes from the oven and allow to cool to touch safely.
Step 5
Using a paring knife, carefully cut a shallow circle around the entire top of the potato, creating a shallow hole.
Step 6
Remove only the thin skin from the circle cut.
Step 7
Using a spoon, carefully remove the flesh from each potato, leaving 1/8 inch inside the circumference of each potato.
Step 8
Place all potato flesh into a bowl.
Step 9
Make the flax egg by placing 1 Tablespoon of flax meal and 2 Tablespoons of water in a small bowl, stir and allow to sit while preparing the other ingredients,

Chop all the vegetables and herbs.
Step 11
Add flax egg and plant milk to the bowl with the potato flesh.
Step 12
Using an electric mixer, mix until creamy.
Step 13
Add diced vegetables, herbs, and spices.
Step 14
Restuff the potato skins with the veggie filling.
Step 15
Place stuffed potatoes into a baking pan to bake again.
Step 16
Add 1 cup nacho cheese sauce to the potato flesh in the bowl. To the potato flesh in the bowl.
Step 17
Using an electric mixer, blend the cheese sauce into the potato flesh until creamy.
Step 18
In a saute pan, saute garlic and onions until translucent.
Step 19
Add sliced mushrooms and saute until browned. Add a little vegetable broth to prevent sticking (water will also work)

Add sauteed garlic, onions, and mushrooms to the cheese and potato mixture.
Step 21
Stir together and restuff the potato skins.

Herbs and spices.
Step 23
Place stuffed potatoes into a baking pan to bake again.
Step 24
Preheat the oven to 350 degrees
Step 25
Cook for 30 minutes until heated through.

Remove from the oven.
