Instructions

Step 1
Grate zucchini on medium to large size grate opening. Place grated zucchini into a bowl lined with a clean kitchen towel. Salt lightly and let sit for ~10 min

Chop green onions
Step 3
Add a couple tablespoons of oil to the pan and turn to medium heat so oil can heat up
Step 4
Mix flour, panko, eggs, garlic/garlic oil, green onion, and seasoning in a medium bowl
Step 5
Pick up towel with zucchini in it and wring it out over the sink, removing as much excess water as possible. Add zucchini to mix
Step 6
Using a spoon, add a heading spoonful of batter into the oil. Use the back of the spoon to flatten batter into a pancake (about 1/2 inch thick). Cook for for about 3 minutes on each side. They should be browned on each side and cooked through.
Step 7
Serve with Greek yogurt or sour cream
